In food, tartaric acid is used for:
- Stabiliser of egg white, increased volume and heat resistance of beaten egg white.
- Reducing discolouration of boiled vegetables;
- Natural preservative
- Raising agent, combination with baking soda (which needs an acid ingredient to activate it) in formulations of baking powder.
- preventing crystalisation of sugar syrups.
